Al-Fayesh bread is considered one of the ancient dishes in the Egyptian society, which is part of Africa. These pastries, which have a distinct smell from the rest of the pastries, are considered from the sourdough bread that is used as breakfast with a cup of tea with milk, coffee or Nescafe. This is a very favorite meal in Upper Egypt, the south of Egypt. It is fermented and baked in the form of a fermented loaf of bread, and it is considered the mother of the dough because this is the first stage. Then after this stage, the cutting stage and the roasting stage take place. We will explain each stage with pictures.
** Ingredients **
1- 5 tablespoons of sugar
2- Big spoon of dry yeast
3- tablespoon baking powder
4- 2 tablespoons vinegar
5- warm water cup
6- cup of flour
7- A small spoonful of ground mahlab is optional
8- Big spoon of turmeric
9- 3 tablespoons ghee
10- kilo flour
11- Teaspoon salt
13- 2 and a half cups of milk
14 -half a cup of corn oil
**First stage**
This is the way to prepare yeast
We prepare all of these ingredients at this stage
1- 5 tablespoons of sugar
2- Big spoon of dry yeast
3- tablespoon baking powder

** The second stage of leavened bread **
At this stage, we count the second part of the fermentation stage, and it is considered the best sourdough
We add the previous ingredients and in a deep bowl, we narrow the previous fermented dough and we knead by adding milk gradually with the kneading in the electric machine.
** The third stage of leavened bread **
We take the dough and shape it into a rectangle, sandwich or conical shape
It is fermented in this way before entering the electric oven
In the stage of settling, it should be placed in a medium heat until it takes a golden color, and then left until it cools completely, then we cut it, roast it and serve
